The Meals & Recipes site is designed from the ground up to support and compliment the T2DFAK Healthy Human Lifestyle Nutrition Plan.

All of the recipes and meal plans here are configured to be as low-carb as possible with a sufficient amount of protein and fat, in keeping with the Plan's guidelines.

The approach has been to assume the beginning user has -0- knowledge and training.  This means that anyone, no matter of skill in the kitchen, can start where they are and use the resources presented here.

The primary prerequisites affecting the Meals & Recipes site are :

EVERYTHING MUST BE ACCESSIBLE

Wal*Mart First . . . Amazon second . . . Anything else won’t work.

How many times have you heard “If you can’t get it at Wal*Mart, you don’t need it.” I don’t agree with that sentiment, but far too many in the US, especially low-income households, believe it 100%.

Type 2 diabetes is impacted by many of the additives in “fast food” and “convenience” food. If someone has grown up with a diet of these foods, anything not as accessible will tend to be passed over.

The US is a 100% “convenience” culture.

Accessibility is key. “Accessibility” must also be applied to the practicality of things. “Foodies” will already have ideas about how to include “foodie” ingredients.

The foods prepared should be “accessible” in that they are “normal” foods that any family would eat. “Culturally accessible.”

EVERYTHING MUST BE AFFORDABLE

If momma can’t afford it . . . Hot Pockets® will go in the cart.

If you’re living paycheck-to-paycheck or on a fixed income like Social Security, AFFORDABLE is the watchword. Many of these households struggle to pay rent, utilities, and buy basic food . . . often in an area that is a “food desert”.

Food insecurity is directly tied to affordability. If the “diet” is filled with expensive, “weird” food, or requires learning entirely new, unfamiliar cooking methods . . . It’s Hot Pockets®, frozen chicken nuggets, and frozen pizza.

Affordable also impacts medications. Expensive medications are often simply not filled or taken sparingly (improperly). Medications do no good if they aren’t taken.

The "In The Kitchen" menu option at the top of the site provides basic kitchen information and basic skill instruction to those who have a hard time boiling water.

This is not culinary school and it's not intended to turn anyone into a "foodie" or "chef" . . . but hopefully will provide enough information that anyone can feed themselves.
